Cook turkey giblets by putting them under the bird while it is roasting
Remove turkey from pan to a serving plate.
Add onion, carrots and rosemary to the roasting pan.
High heat bring to a boil. separate the fat off.
Add port, jam, flour and stock. Simmer for 1/2 hr
Use a colander to filter out the large bits.
Simmer
